RECIPE: 4 Cheeses Bacon and Egg Muffins

The following makes 6 muffins

Ingredients
4 Eggs or 5 if muffin tray is deep
Picnic Bacon
1 Heaped tablespoon of Ricotta
A few shakes of parmesan to taste
Parmesan for topping
Mozzarella
Tasty Cheese

Method
Preheat oven to 160 degrees.
Oil a muffin pan and put bacon in a ring in the holes of the muffin pan.
Cook for roughly 10mins, you don't want it to cook all the way just yet.
Blend eggs, ricotta and a small portion of parmesan.
Pour egg mix into the rings of bacon, allow at least half a cm from the top of the pan.
Cook for a further 15 mins, check there is no liquid under the muffins and the egg mixture is cooked through. Should be browning on top. (Deeper muffin trays will take longer to cook)
Sprinkle cheese mix on top and cook till brown and crunchy. (Optional, put under griller)
